The way from Be'er Sheva to Eilat, can be very interesting if you only decide to leave your comfortable, air conditioned car..
I would strongly recommend visiting Hai Bar - mini safari, one would have thought great fun for kids, but I trully enjoyed it myself.
Another option is Timna National Park, with Salomon Pillars, and welcoming Bedouin tent in the end of your journey, full of hoummus with pitta bread and pickles, yummi...
